Smoky Kale & Black Bean Oats

- Toppings
2 cups chopped kale
1 can black beans (~15oz)
1 diced tomato
1/2 medium onion
1 clove garlic
- Seasonings
1/2 tsp cumin
pinch of smoked paprika
pinch of cayenne
1 tbsp. tamari (or soy sauce)
1 tsp. nutritional yeast
salt + pepper to taste
- Toppings (optional)
Drizzle of sriracha
2 tbsp. sun-dried tomatoes
Directions
- Add oil to the pan. Set to medium-high heat. Sauté onion for 1-2min.
- Add garlic, cumin, smoked paprika, and cayenne. Sauté for 3-4min.
- Add beans, kale, tomato, and tamari into the pan. Cook for an additional 2-3min.
- Microwave oats and water for ~2min.
- Top the oats with the kale and black bean mixture.
- Sprinkle nutritional yeast, sriracha, and add sun-dried tomatoes on top.
Notes
- Any texture of oats you use is fine (rolled, quick, etc.). Simply adjust the cook time accordingly.
