
This recipe elevates your basic tofu scramble with three key ingredients: tomato paste, nutritional yeast, and tamari (or soy sauce). With a base of tofu and vegetables, this dish is packed with protein and plenty of vitamins to start off your day right.
The key to the tofu scramble is to maximize the surface area of the tofu so it absorbs as much seasoning as possible – this means smaller chunks. This recipe is highly customizable. Use the vegetables you have in season, add whichever spices you like (and omit the ones you don’t), and play around with it!
The Best Tofu Scramble

1 block tofu (~16 oz.)
2 tbsp. oil
1/2 medium onion
3 cloves garlic
1 cup veggies (fresh/frozen)
- Seasonings
1 tsp cumin
1/4 tsp. smoked paprika
1/4 tsp. turmeric
1 tbsp. tomato paste
1 tbsp. tamari (or soy sauce)
2 tbsp. nutritional yeast
salt + pepper to taste
- Toppings (optional)
Drizzle of sriracha
1/4 diced avocado
1/4 cup sun-dried tomatoes
Directions
- Add oil to the pan. Set to medium-high heat. Sauté garlic for 30s.
- Add onions, fresh veggies, cumin, smoked paprika, and turmeric. Sauté for 3-4min.
- Rinse tofu and crumble directly into the pan. Cook for 3-4min.
- Add remaining seasonings (tomato paste, nutritional yeast, tamari) and frozen peas. Cook for an additional 2-3min.
- Top with sun-dried tomatoes, avocado, and/or sriracha (optional).
- Enjoy!
Notes
- For veggies, I like to toss in a cup of frozen peas at the end. It’s quick, easy, and offers some additional protein.
- Don’t forget to add salt throughout the recipe! Salt is critical to bring out the flavor.
